Recipe: Orange Polvorones (shortbread)

Anyone who has tried polvorones knows that these delicious confections of Arab origin do justice to their name – they break apart when you eat them. Although its initial purpose was somewhat bitter (made with pork fat, the polvovon was used in Spain during the Inquisition to detect Jews or Muslims living in secret ), the dessert now has the sole purpose of sweetening our life .
This week, chef Atzimba Pérez delights us with a recipe for delicious orange polvorones.
Ingredients
- 1 ¼ cup lard or shortening.
- 3 egg yolks
- ½ teaspoon baking powder
- 1 cup powdered sugar
- 4 cups flour
- 2 oranges (pulp and juice)
- Butter for greasing
Procedure
- Whisk lard until creamy
- Sift the sugar, flour and baking powder
- Add the egg yolks one by one. While whisking, add the sugar, flour and baking powder. Add the orange pulp and juice as well.
- Form small balls, and place them in greased trays. Varnish some with egg yoke.
- Bake at 300 degrees for 25 minutes, until they are golden brown.
- Sprinkle with powdered sugar.
