Cheddar Cheese Biscuits
This is my first time making biscuits, and I would say it was so fun and easy to just grab and incorporate some flour, butter, buttermilk and my favourite: cheddar cheese! You can make these little guys for every occasion: breakfast, lunch, side, dinner, or as an appetizer or finger food.
I made them tiny, enough for two bites, but you can go a little bigger and add some minutes of baking time. Feel free to add jalapeño or chives to the recipe if you want! Enjoy!
Preparation Time: 30 min.
Cooking Time: 12-15 min.
Ingredients:
- 2 3/4 cups all purpose flour
- 1 teaspoon salt
- 2 3/4 teaspoons baking powder
- 6 ounces very cold butter, diced
- 3/4 cups shredded sharp cheddar cheese
- 2 egg yolks
- 7 ounces buttermilk
Directions:
- Sift the flour, salt, and baking powder into a large bowl. Add the butter, and toss to combine. Use your fingertips to press the butter cubes and make them smaller, and the mix resembles coarse crumbs.
- Add the cheese (you an also add some herbs at this time) and toss to combine. Make a well in the center of the bowl. Add the yolks and buttermilk into the well. Use your hands to mix it until it is well combined and has formed a shaggy mass. Do not overmix.
- Chill the dough for 10-15 minutes. Scoop the dough to make little balls (like the size of a lime) and place them onto a baking sheet lined with parchment paper. Press down slightly.
- Egg wash the scones well. Garnish with a sprinkling of cheddar cheese. Bake the scones in a 350º F oven until risen and evenly browned, about 12-15 minutes. Let cool or eat warm.
