Banana Bran Muffins
My husband loooves muffins, so I always find myself searching for new, healthy and low fat recipes, just to help him indulge without the guilt of eating a 500 calorie small muffin as breakfast.
This recipe is one of our favorites: low fat, lots of fiber and the delicious taste of bananas! You can always add chocolate chunks, raisins or walnuts to make them richer. Enjoy!
Preparation Time: 10 minutes
Cooking Time: 20 minutes
Ingredients:
- 1 cup all-purpose flour
- 1/2 cup sugar
- 2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 cups of All Bran (Kellogg’s) cereal
- 1 cup fat-free milk
- 2 egg whites
- 2 tablespoons vegetable oil
- 1 cup thinly sliced ripe bananas, mashed.
Directions:
- Preheat oven to 400ºF.
- In a medium bowl stir together flour, sugar, baking powder, soda and salt. Set aside.
- In large bowl combine the cereal and milk and let stand 3 minutes, until cereal has absorbed milk and it’s moistened. Add egg whites and oil; beat well. Stir in mashed bananas. Add dry ingredients, stirring until just combined. Portion evenly into twelve 2 1/2-inch muffin-pan cups coated with cooking spray or lined with foil bake cups.
- Bake for 15 to 20 minutes or until toothpick inserted in center comes out clean. Enjoy!
