Ham And Cheese Sincronizadas With Homemade Tortillas
Sincronizadas are the easiest thing to make and the perfect snack or lunch. I’m not exactly sure what the difference is between them and quesadillas but I like saying “sincronizadas” instead of “kay-sa-deeyas”. This recipe uses ham and gooey cheese with homemade (that’s right folks- it’s worth the extra effort) tortillas. They’re inexpensive and travel well in a sandwich bags so you can always have one handy while you run errands- buen provecho!

Ingredients:
- 12 fresh tortillas- see note
- Canola oil cooking spray
- 1/2 pound shredded cheese such as Monterey Jack, Oaxaca, or Mexican manchego
- 1/2 pound sliced ham or turkey
- Avocado slices, optional
- 0 Salsa of your choice
Directions:
- Heat a pan, griddle, or a comal over medium heat and coat with cooking spray. Top as many tortillas as will fit into the pan with cheese and a slice of ham or turkey. Cover with a second tortilla. Toast until the bottom tortillas until golden brown and the cheese begins to melt. Flip over and toast the other side.
- Transfer to a plate and slice any way you choose and serve with avocado and salsa.
For fresh tortillas: (depending on which brand you use)
For the Dough:
- 2 cups corn masa flour (preferred: MASECA)
- ¼ tablespoon salt
- 1¼ cup water
- In a bowl mix the , water and salt until it is all incorporated and a smooth dough is formed which doesn’t stick to your hands. If the dough feels dry, add teaspoons of water (one by one). Once the dough is ready, cover with a wet towel so that it does not dry out.
- Divide the dough into 16 equal portions and form little balls. Flatten each ball between two sheets of wax or plastic paper, using a press for tortillas and start making the tortillas.
- Once the tortilla is ready, cook on a hot griddle for 1 minute each side, or until the tortilla fills with air. Makes 16 tortillas.
