Arroz con Leche

Who can resist this classic dish with rich, creamy rice, sweet milk and a sprinkle of cinnamon? This treat is simple to make, dirt cheap, and impresses the crowds. Of course you can add whatever you like but I like to keep it simple by adding some almonds and raisins. Salud!

Cook Time: 1 hour

Preparation Time: 10 minutes

Yields 4 servings

Ingredients

  • 1 cup white rice
  • 1 12 oz can sweetened condensed milk
  • 1 12 oz can evaporated milk
  • 1/2 cup whole milk
  • 3 teaspoons vanilla extract
  • 1 cinnamon stick
  • 1/2 cup raisins (optional)
  • 1/2 cup toasted almonds, chopped (optional), or your favorite type of nut

Directions

  1. Rinse the rice with very cold water. Add 2 cups of water, rice, and one cinnamon stick to a heavy saucepan. Cook on low heat until the rice has softened, about 15- 20 minutes.
  2. Once the rice has cooked, stirring constantly with a wooden spoon, add the sweetened condensed milk, evaporated milk and the whole milk–keep stirring until the mixture has thickened or until desired thickness (about 20 minutes). Add the vanilla, raisins and nuts (if using).
  3. Let cool, uncovered. Top with cinnamon and serve.**Ojo: the rice will thicken as it cools and it will be a little runnier than traditional rice pudding.
