Mushroom Fiesta Tacos

Easy mushroom tacos are always a hit a the dinner table. The key is to have lots of delicious add ins that each person can choose from to complete their own tacos, and of course a spicy salsa on the side!

Yields 3 servings.

Ingredients

  • 1 onion, chopped
  • 1 garlic clove, minced
  • 1 serrano chile, minced
  • 12-15 sliced mushrooms (1 pound approx), a mix between white button and porcini mushrooms
  • 4 sun dried tomatoes, drained and chopped
  • 3 tablespoons dry white wine
  • 1/2 of a 15oz can of pinto beans, drained (save the rest for your next meal, or as a side)
  • 1 tablespoons fresh cilantro or parsley
  • salt and black pepper to taste
  • sprouted or whole wheat tortillas

Directions

  1. Heat 1 tablespoon sunflower oil on a big saute pan over medium-high heat, add the onion and garlic and cook until slightly browned. Add the mushrooms, sun dried tomatoes, wine, and seasoning to taste. Increase the heat to high, cook until the mushrooms have browned a bit. Stir in the beans and cook for 5 minutes more. Turn off the heat and sprinkle with cilantro.
  2. Fill the tortillas with the mushroom mixture and your favorite add ins. My personal favorites are: avocado, grated cheese, and spicy salsa.
