Recipe: Black Bean And Tomato Soup
I confess I found this while looking for something else. It’s a perfect example of the serendipity of piddling-around on line.
The photo got me first – made me hungry. So I thought, why should I be the only person affected by this picture?
Directions:
- In a large saucepan fry ’til just coloring
- Couple of peeled cloves of garlic
- Chopped onion
- 1 tablespoon of sunflower oil
Add Ingredients:
- Drained can of chopped tomatoes (~ 400g)
- Drained can of black beans (~ 400g)
- Can of sweet corn (~ 200g)
- Cup of (frozen) peas (~ 200g)
- 2 bell peppers – chopped (~ 200g)
- 1 dried ancho or mulato chilli – soaked for 10 min in enough boiling water to cover it (add soak water to soup, too).
- Juice of a lime – zest, too if you like.
- Desert spoon of brown sugar
- 1 tsp ground cumin.
- 1 tsp ground coriander.
- 1 pint of vegetable or chicken stock
More Directions:
- Bring to the boil.
- Cook at a gentle simmer for half an hour.
- Blitz in a blender or with a potato masher.
- Salt and pepper to taste.
- Add more stock if it is too thick.
Serve with fresh coriander, sour cream, and tortilla chips.
