Huevos A La Carrera, Or, Quick Tacos

If you’re like me, you like to eat — especially in the morning. You know, before you have your coffee and as you’re getting ready for work, you start thinking about all the things you have to do, so breakfast is the last thing on your mind. Consequently, when it comes time to eating, I want something super yummy, super fast.

Huevos a la carrera to the rescue!

Basically, what this recipe calls for is sauteed whatever-you-have-in-your-fridge with scrambled eggs, some tortillas, and if you’ve got a few seconds extra, some cheese and salsa. So, let’s take a typical scenario of what’s in this Mexican’s fridge.

I open the fridge and there’s onion, spinach and tomatoes, sometime’s there’s also zucchini. Maybe you have some cilantro, papas or aguacate. The important thing is that it’s healthy and you want to eat it.

So I chop everything that tickles my fancy into thin slices, sauté the onions first, then add everything else. When it’s sauteed to my liking, I add an egg or two, then salt and pepper. While this is going on, I’m warming up the tortillas, or quesadillas, depending on whether I have or want cheese.

Then I take the tortillas, fill them with egg, and serve myself some yummy tacos. If you have aguacate or salsa, add it. Then I eat, brush my teeth and I’m out the door! Don’t forget the coffee!
