Mexitarianism in Action: ‘Cheese’ Enchiladas

Perhaps you recall my post about being a Mexitarian — that is that I refrain from meat except when guilted into it by my relatives — well, there’s another dimension that I neglected to mention in my last post.

I ordered the cheese enchiladas today in San Antonio, Texas, only to remember that, well, even “vegetarian” options include meat in Mexican restaurants! So check out my cheese enchiladas (quite scrumptious!) with the meat sauce on top…yummy?

Lesson learned? Mexitarians must never forget that, just because it doesn’t SAY there’s meat in it, doesn’t mean there won’t be! Meat’s almost like a condiment!
