Cajeta And Tequila Gelatin

My mom’s recipe made with a special twist: tequila! Please… ENJOY!

Preparation Time: 60 mins

Yields 4 servings.

Ingredients:

  • 1 can evaporated milk (12 fl oz)
  • 3/4 cup cajeta (Coronado quemada is the best)
  • 1 1/2 envelopes of Knoxx unflavored gelatin
  • 1 tequila shot (30 ml aprox)
  • 1/2 cup vanilla soy milk (optional)

Directions:

  1. Hydrate the gelatin in 1/2 cup of cold water.
  2. In a sauce pan, over medium high heat, heat up the evaporated milk and pour the cajeta, stirring with a wooden spoon until it is dissolved.  You can add half a cup of vanilla soy milk, this will give a very tasty flavor and special texture to the gelatin.
  3. Bring it to a simmer and turn off the heat. Mix the gelatin, breaking up any lumps and stir in the tequila.
  4. Pour the mixture into individual molds or a big one and wait to cool down. Refrigerate until its firm.
  5. You can serve it with fresh strawberries, bananas, pears, etc.
