Simple Bean Taquitos/Flautas

So, I think we’ve established that I’m both a beaner and mostly vegetarian, and let me tell you that generally speaking, I love to eat. Only problem is, I’m not excited about cooking. So, most of what I make is a quick combination of speedy and yummy foods (heavy on the beans). Last night I made some great taquitos (or flautas in some circles) with refried pinto beans (see how to make those here) and thought it’d be cool to share.  Here goes.

Ingredients:

  • Corn tortillas
  • Refried beans (pinto or black both work)
  • Cheese (your choice what kind)
  • Avocado
  • Salsa
  • Olive oil/fake butter

Directions:

  • Heat up your skillet to medium heat and add your olive oil, or fake butter, or real butter, or whatever you like to cook with.
  • While you do this, turn on a skillet or comal and begin to warm up the corn tortillas.
  • As they are warm and pliable, add some cheese and bean to each one, and roll them into flauta/taquito form.
  • Place them in the skillet. It’s easier to place the end of the tortilla, or the part that can come unrolled, down so that when that part fries it stays in place and you don’t end up with a tortilla mess everywhere.
  • Cook on all sides until brown.
  • Serve with avocado and salsa, or crema, or whatever else you like on top.
  • Eat!

So there you have it, my simple taquito/flauta recipe. Hopefully you’ll try it, because for this wary chef, it’s totally worth the effort.
