Sara’s Sopa De Calabaza, Zucchini
Okay y’all, no ridiculous video of me today. Rather, I just wanted to give a quick breakdown of my favorite sopa de calabaza (I use zucchini) which I haven’t made in a while, but I’m craving hard core right now.
Basically, what I do is slice up the zucchinis just so they boil faster. Then I boil the zucchini until it’s soft, you can use your judgement on that, it changes the taste only slightly in my experience. Once the zucchini is boiled, transfer them to a blender — but be careful not to burn yourself, perhaps use a spoon with slits.
I add a little bit of milk, to taste, and blend it. Once it’s the consistency I want, you can either make it really liquid-ey or a little thicker depending on your taste, and then I put it back in a saucepan and boil it, add spices. Some of the spices you can add are salt, pepper, comino, cilantro, you can even boil onions or garlic with the zucchini and blend that into your sopa if you want.
I don’t know if this is the “right” way to make sopa de calabaza, but it’s the way I do it, yummers! Let me know what you think.
