What’s The “Right” Way To Eat Huevos Rancheros?

Okay, I’m hoping the NewsTaco community can help me out.

Basically, I’ve been really confused lately as to what the “right” recipe is for huevos rancheros.  Growing up in Los Angeles with a family from Texas is confusing enough, but now as a San Antonio resident, I find that even within the same city they’re prepared differently.

My favorite location to eat huevos rancheros is at my auntie’s house.  Originally from Monterrey, Nuevo León (Mexico) my auntie fries two tortillas, puts them on a plate, then fries the eggs, adds them on top of the tortillas and adds salsa.  A recent restaurant experience also prepared them this way —  with the salsa on the side, to be poured on top of the fried eggs.

This confuses me because the way I grew up eating huevos rancheros was that the salsa was fried in the pan, then the eggs were cooked in the salsa, and then you served them on the plate that way.

Any thoughts to set straight a confused, but hungry, Chicana-Latina-Mexican-American-post-modern-eater?
